It was a little over a month ago that Amarillo got itself a new restaurant, and the it was the first one to truly challenge Chipotle when it came to fast food burritos. Qdoba has been a hotspot in the city since they opened their doors, and Chipotle may be feeling it a bit.

One of the factors is that there is only one Chipotle location and it's on the other end of town from Qdoba, so now those that are more in the middle of the city don't have to drive so far in order to get a burrito.

All of that is about to change. We heard back in December that Chipotle had purchased the building where Arby's resided on Coulter, and the plans were to open a location there. Months have passed since that news and we've had no updates.

That is, until now.

Chipotle recently put out emails asking local companies to bid on the project, and when that happens, it means it's go time.

I received that info from a trusted source who got the email from Chipotle asking for bids, and he was also given the project start date. That date is not too far around the corner.

Construction on the location is slated to begin on Monday, June 2, and with it being an existing building, it shouldn't take it too much time to get renovated and have the doors open.

When those doors do open, it'll mean we've got the majority of the city covered when it comes to the make your own burrito restaurants. Chipotle on Georgia, Qdoba on 45th & Bell, and Chipotle at Coulter and Hillside.
